As we were wondering what to serve for dinner last night and staring at the bag of summer squash our neighbor had given us I decided to whip up a veggie saute over noodles.

This is what we ended up with and it was so inexpensive and yummy! (And easy!).
1 summer squash peeled and seeded, cut into small chunks
2 small heads of broccoli cut into spears
1 large sweet onion
1 can diced tomatoes (we used the basil & garlic flavored ones)
Saute the squash in butter, until medium soft. Add the onion and saute a 3-5 minutes longer. On a baking sheet lined with aluminum foil (to make clean up easy), lay the broccoli and drizzle with olive oil. Broil for about 3-5 minutes, keeping a close eye on it so it does not burn. When the broccoli is roasted, remove from the broiler and cut into bite size pieces. Add it to the veggie saute and add 1 can of diced tomatoes. Simmer for 3 minutes and serve over noodles. We used spaghetti but you can use any noodle. Top with shredded cheese.

The squash and broccoli were free (thanks to the neighbor’s garden), the onion was $0.25, the tomatoes were from the stockpile and ran about $0.30. Noodles were free from the stockpile too so the most expensive part of the dish was the cheese.
