During the week I made meat loaf, which turned out really good. It’s one of those kind of meals that make me think back to being a kid for some reason. I guess that is why they call it “comfort food”.
Anyway, we had quite a bit left over and after having it for dinner and lunch the next day I wanted to do something different with it to use up the rest of it.
Since we seem to have an over abundance of Pillsbury crescent rolls (thanks to printable coupons), I decided to use those to make a pastry pocket.
They turned out really good and were really easy! You could get creative with the general idea but I kept it simple (that is my favorite type of cooking)!
Meatloaf Pastry Pockets
Using Pillsbury crescent rolls (or any tube style crescent roll), separate the dough. Using your fingers flatten out the dough and form a square shape (I just cut the triangle dough and rearranged it to form a square).
Place a small amount of your meatloaf in the square and add 1/2 slice of cheese (we used Provolone). Using your fingers seal up the dough and place on a baking sheet. Bake for about 14 minutes (keep an eye on them so they don’t get overbaked).
Remove from the oven and enjoy!
