Very Inexpensive Dinner Idea: Grilled Reuben

Need some dinner inspiration?  Last night’s dinner was delish, and it was incredibly inexpensive.

We had home made rueben sandwiches…..yum!  I forgot to take a photo, which is irritating.  Sorry about  that!

To make 4 Reuben’s I used:

8 pieces of bread (bought on sale for $1 a loaf)

Butter (free with coupons a while ago)

Muenster deli cheese ($0.50 a pack some time ago;  only used 1/3 of the pack).  Swiss also works well.

3 packs of Budding corned beef packaged meat (0.69 at Kroger & we had $0.55/2 coupons which doubled) You can print your own $0.55 coupon here.

We used corned beef...not turkey!

1 can sauerkraut (about $0.69)

1 bottle Wishbone Thousand Island dressing (free after $1 coupon at Kroger that doubled).  We only used about 1/4 of the bottle.

We use our electric griddle and butter 1 side of the bread.  Grill the bread, butter side down, until it is nice and toasty.  Remove the bread from the griddle & let them cool.  Heat sauerkraut in a small pan on the stove and then drain.  Once the bread cools, butter the ungrilled side and place 4 pieces on the griddle (again, butter side down).  Stack 1 1/2 pieces of cheese, an ample amount of the meat and 1/4 the can of sauerkraut on each piece.  Top with the remaining 4 slices of bread (butter side up).  Grill until they become toasty brown.  Dip in Thousand Island dressing.  Yum-o!

  1. I pretty much do the same thing, but I like to add a little hot (spicy) mustard along with the Thousand Island. We also like to serve it on rye bread. You’re right. Yum-o!
