We were invited to a casual party and we wanted to bring something for dessert along with our dish to pass.
This is what we decided to make, and they turned out yummy!
Easy Lemon Bars
Crust:
2 cups all purpose flour
1 cup confectioners’ sugar (plus more for dusting)
Pinch of salt
2 sticks of butter or margarine (we used margarine) – room temperature
Filling:
4 eggs
2 cups sugar
6 tablespoons flour
6 tablespoons fresh lemon juice (we used a bit more, the juice from 3 lemons which totaled about 8 tablespoons)
Directions:
Turn oven to 350 & allow to preheat. Lightly grease a 9 x 13 x 2 pan with margarine or butter
Combine the flour, confectioners’ sugar and salt in a bowl to make the crust. Cut in the margarine or butter to make a crumbly mix. Pour this into the pan and pat it down firmly and evenly with your hand. Bake it for 15 – 20 minutes.
To make the filling mix the eggs, the sugar, flour and lemon juice in a bowl. You can add a bit of finely grated lemon rind to the filling if you wish (we did). When the crust has finished baking pull it out and pour the filling over the crust. Bake for another 25 minutes.
When cooled, sprinkle with confectioners’ sugar to make them pretty. (Put the confectioners’ sugar in a sifter or fine mesh strainer and tap it to get a dusting of sugar).
