Easy Potato Bacon Soup Recipe

Simply delicious! This weekend we whipped up a bowl of easy potato bacon soup and it turned out to be super easy and very yummy. Paired with a few pieces of bakery bread, this was a meal that we really enjoyed. (And there is leftovers too, which is always a good thing!).

Easy Potato Bacon Soup

Ingredients:

10 medium potatoes, peeled and cubed

1 package of bacon

2 onions, chopped

4 cloves of garlic (or 4 teaspoons of chopped garlic in a jar)

1/2 cup flour

1 pint heavy cream

2 cups milk

6 cups water

8 chicken bullion cubes

salt and pepper

shredded cheese

Directions:

Boil the potatoes for 15 minutes, until they are tender. Drain and set aside.

Cook the bacon until crispy, drain and allow to cool. Once cooled, cut into small pieces for topping on the soup. Save the bacon fat!

Warm the water in a medium pan and add the bullion cubes and allow them to dissolve.

In a big soup pot, use 4 tablespoons of the bacon fat to saute the chopped onion until it is soft (3-5 minutes).

Add the garlic and cook for another minute or so, watching carefully so the garlic does not burn.

Stir in the flour to make a paste and then add the water/bullion mixture little by little, making sure to stir well so the flour doesn’t clump up. Add the heavy cream and the milk as well.

Season with salt and pepper to taste.

Add the cooked potatoes and cook for 10 minutes on low heat, stirring every so often.

Top with bacon pieces and shredded cheese, and pair with a nice piece of bread.

We enjoyed the rich creaminess of the soup and found that it was quite filling. You could use any kind of potatoes for the recipe, and add some chopped green onion to the top as well.
