Looking for a thrifty recipe idea? Thick and Hearty Chili is one of our favorite cold weather meals, and we love to make a nice big pot of it and feast on it over a couple of days. It’s a really thrifty dish too, with most of the items probably already in your stockpile! If you buy Zaycon Fresh ground beef like we do, it is a nice dish to use that beef in.
Thick & Hearty Chili
1 pound ground beef – browned, drained and rinsed
2 green peppers, seeded and chopped
2 medium onions, chopped
3 tablespoons chili powder
3 – 14.5 ounce cans of diced tomatoes (flavored if you wish)
1 small can of tomato paste
1 large or 3 small cans of tomato sauce
1 tablespoon brown sugar
1/2 to 1 teaspoon hot pepper sauce (more if you like more spice)
2 cans kidney beans
Directions:
Boil the onion and pepper until just tender; rinse. Add to the browned beef, with chili powder, and cook for 1 minute on medium heat. Add all the other ingredients except the kidney beans. Heat to a boil and simmer about 1 hour. Add the kidney beans and stir. You can continue to simmer for another couple of hours (I like to keep mine simmering on low for a good portion of the day).
We serve ours scooped over with corn chips, with a dollop of sour cream and shredded cheese. It is also yummy plain or with crackers. Enjoy this thrifty recipe idea and if you have a favorite, share it below.
