When we spot a good deal on pasta sauce, we buy a lot of it (we “stock up”)!  Sometimes the sauce isn’t quite fantastic, it is so-so.  Well-don’t be disappointed!

Here are some tips we use for adding flavor and substance to so-so sauces:

1)  Add stuff!  We like to add sauteed onions and a can of mushrooms (fresh mushrooms works too) to the sauce, along with some sliced black olives.  Green peppers or roasted tomatoes would also be good.

2)  In red sauce, try adding lemon juice &/or vinegar to brighten it up or to add that “something” that is missing.

3)  If the sauce seems to acidic, add some granulated sugar to i.  Brown sugar, maple syrup or molasses also works.

4)  Add a little nutmeg;  it adds something nice to a sauce

5)  A spoonful of cottage cheese or cream cheese makes the sauce creamier and thicker

Experiment a little, and don’t be afraid to buy that cheap pasta sauce because now you are armed with ways to make it more gourmet!
