Stuffed Green Peppers
4 green peppers
1 onion, chopped
1 can diced tomatoes
1 pound of ground beef
2 tbsp. Worcestershire sauce
1 cup cheddar cheese
1 1/2 – 2 cups of cooked rice (can be white, yellow or brown rice, or prepared rice)
Instructions:
Preheat oven to 350. Brown ground beef with chopped onion. Drain.
Add diced tomatoes and Worcestershire sauce & simmer 15 minutes.
Add cooked rice and simmer an additional 10 minutes. We often us the Mahatma yellow rice packets, or you can use flavored rice or plain rice.
While this is simmering, cut the stem/top off the green peppers and remove the seeds. Rinse.
Add 1 cup of cheddar cheese to the meat & rice mixture. Remove from heat and stuff peppers using a spoon; be sure to push the stuffing firmly into the peppers so they are very full.
Bake for 30 minutes.
